To disable the Timeline View, remove access from the end-user to the Account_Overview_Layout_vod__c object.
In order to disable the Timeline View only in the offline Veeva CRM Application, inactivate the VMobile Object Configuration record related to the Account_Overview_Layout_vod__c object.
