No, this is not possible. When re-sending the Double Opt-In confirmation email, the new email utilizes the previous Sent Email record to obtain Consent Header information.
Since the previous Sent Email utilized the Consent Header for the original language, the new Sent Email record will still utilize the language defined on the original email. This is true even when a different language is selected via the Language Selector on the Consent Capture screen.
